Water Lentils + Matcha: A match made in superfood heaven

By now you’ve probably heard of matcha. It was dubbed the superfood of 2018 - matcha is packed full of antioxidants, amino acids, and phytonutrients. However, you most likely have not heard of water lentils.

Water lentils are new on my radar and I can’t believe it took this long for them to enter my life. These little gems are grown on the surface of water and are a sustainable source of nutrients, fiber, fatty acids and protein. They are grown without the use of pesticides, grow 4x faster than any other plant, and 98% of the water used can be recycled.

Now don’t let the name fool you, water lentils are not actually a lentil. They are from the Lemnoideae family and are categorized as a flowering plant. It was actually their lentil like shape that resulted in the adoption of the name water lentil. This means that water lentil superfood powder is not disruptive to digestion like the common lentil, think gas, bloating, and anti-nutrient properties. The water lentil superfood contains fiber, nutrients, and anti-inflammatory omega-3s that can actually improve digestive health!

One scoop of water lentil powder is equivalent to one serving of kale. This is important because we should be eating a minimum of 5 servings of fruits and vegetables per day. Optimally, we would be eating nine to twelve servings - which if you've ever tried, its very hard! Adding this to a smoothie can boost your number and add many more beneficial compounds. Water Lentil Superfood also contains essential branch chain amino acids, minerals like magnesium and phosphorus, and fiber. Additionally, one scoop contains 26 mg GAE, which stands for gallic acid equivalents and is a way to measure antioxidant capacity. To put this into perspective, one cup of green tea also contains 26 mg GAE making water lentil powder a great source of polyphenols and antioxidants.

Now in my never-ending effort to hack healthy I developed a latte that will blow your oat milk option out of the water. I am calling this a Boosted Matcha Latte because it contains not only matcha but water lentil superfood. This latte contains free amino acids for building and repairing cells and muscles, healthy fats from coconut butter and MCT oil, fiber from the water lentils, and plenty of anti-inflammatory antioxidants from the water lentils and matcha.

Check out the recipe below and give it a shot!
