This Week I am Loving: Watermelon Seeds

This week I have been all over watermelon seeds, specifically sprouted seeds from Go Raw. These seeds are surprisingly bitter compared to the flesh of a watermelon, however they are not lacking in nutrients!


A few highlights:


Magnesium

Magnesium is one of my favorite minerals because it is responsible for not just relaxation and sleep but nerve and muscle function. The FDA recommends that adults consume 400 mg per day. One serving of watermelon seeds contains 21 g, which is no small number for a quick snack.




Iron

Iron is responsible for the transport of oxygen through out body on red blood cells. When one is deficient they may experience symptoms like fatigue because cells are unable to produce energy like they should. A serving of watermelon seeds contains .3 mg of iron, which may seem small however the requirement for the day is only 18 mg.


Fatty Acids

Watermelon seeds contain both monounsaturated and polyunsaturated fats, which are anti-inflammatory and useful in lowering risk for stroke.


Overall, watermelon seeds are a simple addition to smoothie bowls, overnight oats, salads, even wraps! One small serving can not only support your nervous system but muscular and circulatory as well, wow! Give them a try and let me know what you think.
