Crunchy, spicy, and hydrating! It is so important to stay hydrated during the hot months. Spending time in the sun, sweating, and even indulging in treats and alcohol can leave us dehydrated. When we don't have enough water there are a full spectrum of symptoms that can arise:
Fatigue
Blurry vision
Headaches
Joint Pain
Lack of focus
Drinking water all day can get boring and may not be possible. Luckily, we can also hydrate with foods! Snacking on these fruits and veggies, and including them in meals will support hydration levels. Here are some of my favorites:
Watermelon
Spinach
Strawberries
Cabbage
Celery
Cucumber
Broccoli
Cauliflower
Carrots
Tomatoes
Cilantro
Beets
This summer slaw is a great side (and taco topping) that will fill you up and leave you hydrated!
Spicy Beet & Carrot Slaw
1 cup beets, shredded
1 cup carrots, shredded
1/2 cup cilantro, chopped
3 TBS Primal Kitchen Chipotle Lime Mayo
Juice from 1/2 lime
Mix all of the ingredients in a large bowl. Adjust mayo and lime to taste.
