Happy Fall!
I am so excited to share with you my favorite granola recipe! It is lightly sweet and full of fiber to fuel any activity or day. I love to pair it with some yogurt or an apple if I'm on the go. Unlike typical granola brands, this recipe is lightly sweetened, and contains plenty of fiber to keep you feeling full.
It is easier than you expect to make and will be sure to please even the pickiest eater!
Fig & Quinoa Granola
Adapted from “the first forty days”
3 cups oats
¼ cup quinoa, cooked
½ cup coconut flakes
1 cup dried figs, chopped
2 TBS chia seeds
¼ cup local honey
½ cup grass-fed butter, I like Kerrygold
Zest of 1 organic orange
1 tsp pink salt
2 tsp cinnamon
1 TBS vanilla extract
Preheat the oven to 300. Line a rimmed baking sheet with parchment paper.
In a large bowl, add the oats, quinoa, coconut flakes, figs, & chia seeds.
In a saucepan, melt the butter, remove from heat and add the honey, zest, salt, cinnamon and vanilla. Drizzle over the dry ingredients and mix until everything is coated evenly. Add to the baking sheet and place in the oven for 30 minutes. Be sure to stir halfway through and keep an eye on it. Once it has reached a golden-brown color it is ready to come out. Let cool and store in an airtight jar for up to 1 week on the counter.
